You can choose Audacity when you need to record just raw audio from Discord. Since it records any sound playing on your computer, it needs no server permissions. FAQ: Can Discord Detect If You're Audio Recording
The short answer is NO when using Eassiy, OBS, and Audacity. As they are all offline tools, they record at the system level and never interact with Discord itself.
This thing is different from Craig that joins the server as a participant. As Craig stays visible to anybody in the participant list with a recording tag right in its name, everyone in the channel will know a recording is on. Discord server administrators may notice that too.
